Homemade Kaya Senang Yang Amat Recipe.

Made home made kaya last night! It is safe to say that I will never buy store-bought kaya ever again. My first attempt was a bit on the sweeter side. I need to tone down the sugar for my next jar. But now, if I am ever out of ideas for presents, you can expect a jar of kaya from me!

Whisk 5 egg yolks. Set aside. Heat 200ml coconut milk with 6 cut pandan leaves and 200g of palm sugar in a pan. Pinch of salt. Boil water in another pot. Put the pan with coconut milk, on the pot like double boiler. Remove pandan leaves. Slowly stir in the yolks, constantly stirring, scraping the side. Stir until thick. Cool before packing.

Dried Chilli Chicken Recipe

Marinade chicken thighs with grated garlic, grated ginger, fish sauce, sesame oil, soy sauce and oyster sauce. After around 15 minutes, put enough corn flour to coat the chicken and making it a batter. I usually mix 1 egg into this, but I thought the marinade was runny enough today for the corn flour to stick. And guys, this is already extremely delicious on its own. This is the same recipe for Chicken Karaage. After frying, it is the most cruchiest and flavourful fried chicken you can make at home.

I took it one step further to turn it into a complete stir-fry. I sauteed some minced garlic, minced ginger, sliced red onions, dried chilli and birds eye chilli. After a minute, I put fish sauce, oyster sauce and some sugar. Wait for the sauce to slightly thicken, turn the heat up to maximum, and put the fried chicken and spring onions. Turn the heat off, and serve with white jasmine rice. .
Can’t wait to let the chicken cool down to pack it up to work! .
I also burned my right thumb tonight. Badly. Never underestimate how hot a pot is after cooking, guys. It seemed cool, but apparently it wasn’t and my thin kitchen towel wasn’t enough

Chicken Kurma Recipe (without coconut milk)

Blend onions, garlic and ginger.

Heat oil in pot, put enough of oil to cover the base of the pan. Sautee star anise, cardamom, cinnamon, cloves around 30 seconds. Sautee sliced red onions until they fully wilt down, almost brown. That builds a deeper flavour profile. Put the blended onions mixture. Cook it out until it turns a bit golden instead of the pinkish raw onion colour, constantly stirring to avoid burning.

Mix kurma powder with some water, making a thick paste. You don’t want to put too much water, as you want to fry the spices instead of stewing it. This is what my Tok taught me in Kedah, and what my Mama always do too. Mixing the powder with water is a good precaution to avoid your spice powder from burning or clumping in the pot.

Put the mixture in the pot, cook until the oil surface. Put in wedges of potatoes, frying them for around 3 minutes. Put in the chicken. I like to stir and cook the chicken first, for around 5 minutes, because the chicken will release its juices and only then I can gauge how much water to put in. Otherwise, I might put too much water in beginning, and with the juices from the chicken, the gravy will be too runny.

Cover it with water, only enough to cover the chicken. Go easy. It’s easier to add more water then trying to make the gravy thicker.

Let it boil on medium heat. And your chicken kurma without coconut milk is done.
